Today I finally got around to doing something that should not have taken me nearly so long to do...making my own granola. I felt intimidated by this...I'd tried once years ago & ended up with a gross mess. But, friends, gluten-free granola is $6.99 for a little 5 oz bag. I gotta figure out how to make my own.
I used this recipe...sort of. I added another 1/2 cup of oats (& next time I would do an extra cup), swapped the wheat germ for oat flour, left out the coconut (nasty), upped the sunflower seeds to 1/2 cup and added a teaspoon of vanilla, then cooked for just over an hour.
Well, ladies and gentlemen, I made some yummy granola, if I do say so myself. (And I do say so, as do my kids & hubby). Next time, I think I may do almond extract and dried cranberries with some flax seeds, perhaps? I'm going to play around with it until I've got several flavors I love. Easy & fun. Check this one off my list.
