Several things learned: sometimes GF baking doesn't even have to require big substitutions or being overwhelmed, I want to include my kids in cooking activities as much as possible to help them know from a young age that they are capable of making their own food, when I make delicious GF goodies, I will want to eat them...and I possess little power against the pull of a No-Bake Cookie. :)

Try A New Recipe/Gluten Free Baking/Mommy & Me time
The other afternoon I was looking for something for SJ & I to do together that wouldn't require a huge investment of time/energy/cleanup. Girl has a short attention span (she's only 3) but she loves to cook. I've been wanting to try to make a childhood favorite of mine...No-Bake Cookies. Since I had all the ingredients on hand, including Gluten Free Oatmeal, I decided today was the day! After reading the reviews very carefully, we scooped & measured our ingredients, put them in the pan & stirred. Sweet girl was so excited when Mama told her that yes, in fact, she could lick the spoon for this treat (a big no-no for me when we are baking with eggs). About 20 minutes later we had solid chocholatey oatmeal goodness.
